Marinated Squid
Try this recipe - you won't be disappointed!
Clean the Squid
Can use:

Tubes
·
Tentacles (don’t worry about removing membrane
or suckers)
·
Flaps
Tenderising the squid:
·
Can soak cleaned squid in milk for several hours
before cooking to help tenderise (I don’t usually bother)
Cooking the Squid
·
Have basin of iced water (lots of ice cubes in
it) ready to place cooked squid in and stop it from over cooking
·
Bring large pan of salted water to the boil
·
When boiling vigorously place cleaned squid (not
too much) into pan to cook
eg tube, tentacles and flaps of one large squid

Once water boiling again, cook squid for ONE
minute
·
After cooking ONE minute, remove squid and place
in the iced water immediately and leave
·
Do the next squid
Marinade (enough for 2 squid)
·
Rind of one lemon
·
1 ½ lemons squeezed
·
2 tablespoons of olive oil
·
1 tablespoon of white vinegar
·
½ tablespoon of hot chilli sauce
·
1 teaspoon of oyster sauce
·
½ teaspoon of minced garlic
·
¼ teaspoon of minced chilli
·
salt and coarsely ground pepper to taste
·
4 teaspoons of brown sugar
Mix up ingredients with a fork, taste and adjust to personal
taste (eg more salt or sugar). Can add ½ cup of chopped fresh parsley for
colour if you like.
Preparing the marinated squid

Use suitably sized air tight resealable
container
·
Cut squid into bite sized pieces (rings,
individual tentacles and slices of the flaps)
·
Place squid in container
·
Pour over marinade and seal container
·
Give sealed container a good shake and place in
refrigerator
·
Marinate (turning occasionally) for 24 hours
before starting to eat. If properly refrigerated should last at least one week.
Halo Bob I made Sqid things 2 nights befor and they were wonderfull and smeld luverly but was bit sloppy with all that beer on it,
